INGREDIENTS
3 lbs. fresh sea bass with skin on – cut to fit pan and pre-salt both sides
1 TBS peanut oil
1⁄2 tsp dried Szechuan Pepper
2 slices of pickled plum
2 TBLS of the plum pickled juice
2 oz. water Fresh ginger, thinly sliced, 1” in length 1-2 fresh cut green onions
DIRECTIONS
Add oil to (a cast iron) 10-12” fry pan/skillet and preheat, using a medium heat/ flame.
Add the Szechuan pepper to the pan and heat till fragrant (about 3 minutes).
Place the fish skin side down in the pan to crisp the skin. (about 3 minutes).
Add the pickled plum, pickled juice, and about 2 oz. of water to the pan.
Place the thinly sliced ginger atop the fish. Cook covered for about 10-15 minutes till done.
Note: At about 1 minute left to go till done, top the fish with the green onion and recover for the last minute.
