Green tea was the earliest and the most common tea produced and consumed. China is believed to be the first country to cultivate and consume green tea as a domestic beverage. Green tea consumption and production soon spread to other countries and its popularity continues to grow among various tea cultures. Green teas are considered lightly processed. There are numerous types based on region, plant varietals and processing method. Heat or "Firing" of the leaves is usually preformed shortly after harvest in order to prevent oxidation and retain the teas natural green character. The method of firing usually denotes the class of tea, (i.e. steamed, pan fired, baked, roasted). Rolling and twisting of the leaves also occurs at various stages. The special methods of processing make each flavor profile unique. The climate, environment, various elevations and season of harvest all play a roll when determining the quality of the leaves. Rare teas are the result of all the right factors happening at the right time. Although some green teas may be produced throughout the year, the highest quality green teas are harvested during the spring. Green tea promotes health and well being. Breathe life, relax and enjoy.
